Bakes well -- I use it in South Beach Diet recipes. Word of caution, make sure if you're not going to use it for a while to store it in an air tight canister. I neglected to do this and wound up with a block of sugar. Problem was easily resolved with a cheese grater. :-) Enjoy!!
